Beetroot & Feta Burger

Football season is underway and there's no better way to host your guest than with a burger that will satisfy your vegetarian friends and meat eaters alike. David Frenkiel, author of The Green Kitchen & Green Kitchen Travels, took your average burger and made it into healthy and delicious meal (meaning your hipster friends will be slightly obsessed). 

I, myself, am obsessed with beets and if they're not present in my meal then, I'm juicing with them. So when I saw this recipe, I had to try it! The recipe was easy to read, simple to make and tasty as ever! Do be careful, the beets could leave your hands slightly tinted but don't let this stop you from trying David & Luise's creation. If you're not much of a beet fan, it's recommended to try zucchini and carrots. Though the combination of feta, beets and garlic is spot on. 

If your friends are disappointed with the lack of meat, I recommend adding a poached egg on top, substituting the mango (personal favorite). 

I made this recipe today for our rugby friends and they were surprised how much they loved it! So its my recipe recommendation for football sunday night! Hope you enjoy it as much as we did!

Recipe calls

  • 3 cups / 750 ml grated raw beetroots (approx. 4-5 beets)
  • 1,5 cups / 375 ml / 150 g rolled oats or flakes of your choice
  • 1 small onion
  • 7 oz / 200 g sheep’s feta cheese or firm tofu
  • 2 cloves garlic
  • 2 tbsp cold-pressed olive oil
  • 2 organic eggs
  • 1 handful fresh basil
  • Salt/pepper

Toppings:

  • lettuce or cabbage
  • mango
  • avocado
  • tomatoes
  • onions
