Eggplant Quinoa and Black Bean Burger

Whenever you're in a pickle to make a meal, have no fear, Maya will inspire you to create not only something delicious but something healthy as well! 

Recipe calls for: 

  • 1 cup cooked black beans
  • 1 cup barbecued eggplant and red bell pepper
  • ¾ cup cooked quinoa
  • ½ cup bread crumbs (you can use a gluten free option)
  • ½ red onion, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • salt and black pepper as needed
