French Crepes with Delicata Squash, Shallots, Cranberries, Herbs & Creme Fraiche

Lorinda's crepe recipe ties in the vibrant fall colors by using squash, cranberries and rosemary. This recipe has 4 of the 5 colors, simple to make and is a perfect match for a quick, delicious and healthy lunch! Hope you enjoyed it as much as we all did in DC!
Crepe:
- 2 cups of wheat flour or buckwheat (gluten free)
- 4 eggs
- 2 1/2 cups of whole milk
- 2 TB of butter
- Pinch of salt
Filling:
- 1 delicata squash unpeeled
- 2-4 shallots
- 1/2 cup to 1 cup of cranberries
- Fresh minced herbs (thyme, rosemary & sage)
- Small container of creme fraiche (or sour cream if you can’t find it)
The Herb Sauce:
- 2 TB. of butter
- 2 TB of flour
- 1/3 cup of half & half
- Salt & pepper
- Minced herbs
