Curry Cauliflower Muffins

Thanksgiving is one of my favorite holidays bringing together friends and family, TONS of delicious food, followed by 'creative' drinks and FOOTBALL! 

This weeks recipe of the week is by the talented Laura Domingo, who creates recipes inspired by eating real, natural foods: proteins, vegetables, fruit and healthy fats (also known as Paelo).  Her recipes are as inspiring as her blog with beautiful photos and inspiring quotes.

They can be served before or with the main dish, complimenting the savory flavors that Thanksgiving has to offer. 


  • 600 grams cauliflower,  (remove outer leaves, broken into 2 cm florets
  • 2 tsp Salt
  • 1/2 red onion
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp fresh rosemary, finely chopped
  • 7 large eggs
  • 1 tbsp fresh basil, finely chopped
  • 1/2 cup coconut flour
  • 1/2 tsp baking powder
  • 1/3 tsp turmeric powder
  • 3/4 cup parmesan cheese
