Today is obviously a very special day with our dear friend Kristen turning 30! Happy Birthday Darling, this one is for you!
As many know, birthday celebrations are one of my absolute favorites! It's a celebration of a person's existence on this earth and to be able to share such a day, is an honor! For this weeks recipe of the week, I couldn't resist but dedicate it to such an incredible soul.
Chocolate Covered Raspberry Cheesecake, which is raw, vegan and gluten free, what more could one ask for? I never knew a cheesecake could be so healthy, so beautiful and so delightful! Marlies recipe nails it and trust me, you won't have the feeling of regret when asking for a second piece.

- 1 1/4 cup soaked cashews
- 2 apple coconut bars (or sub 1/4 cup shredded coconut and 3-4 pitted dates)
- 3Tbs liquid sweetener (ie. @beefreehonee, a plant-based honey made from apples)
- 2Tbs lemon juice
- 3/4 cup raspberries
- 3Tbs melted coconut oil
- 2Tbs cacao/cocoa powder
- 2Tbs melted coconut oil
- 1Tbs liquid sweetener
- 1/2Tbs baobab powder (optional superfood boost) or sub melted chocolate
- 1Tbs almond butter
- 1 pitted date
- Crushed pistachios
- Edible flower petals
